Aged Sirloin In Mushroom Sauce With Zucchini Noodles & Parmesan

Who doesn’t enjoy a delightfully succulent sirloin steak, topped with a decadent mushroom sauce? This fool proof recipe is a sure-fire way of impressing your guests. Paired with a healthy side of Parmesan Zucchini noodles.  

Season your steak once you remove it from the fridge and let it come up to room temperature before cooking. This will give the seasoning enough time to do its magic and bringing it up to room temperature will ensure an even cook.

For The Steak

  • 720 g Beef sirloin (strips)
  • 40 ml Olive oil
  • 6 g Chopped garlic
  • 2 g Onion powder
  • 1 g Cayenne pepper

For The Mushroom Sauce

  • 30 g Butter
  • 40 g White onion
  • 150 g Button mushrooms
  • 4 g Chopped garlic
  • 20 g Cake flour
  • 200 ml Beef stock
  • 100 ml  Cream 
  • 2 g Fine salt
  • 2 g Coarse pepper

For The Zucchini Noodles

  • 800 g Zucchini
  • 300 g Frozen peas
  • 60 ml Olive oil
  • 2 g Fine salt
  • 2 g Fine pepper
  • 80 g Grana Padano cheese


For The Steak

  • Heat oil in a pan, add sirloin & brown on all sides. Add garlic & seasonings & continue cooking to medium

For The Sauce

  • Heat butter in a pan. Add onions & garlic. Sauté for a few minutes, then add mushrooms.  
  • Add in flour continuously stirring to make a roux.
  • Gradually add in liquids while stirring until all liquid has been incorporated. 
  • Let simmer until desired consistency has been achieved.

For The Zucchini Noodles

  • Heat oil in a pan, add noodles & peas. Fry for a few minutes until cooked, but crisp. Season. 
  • To assemble the dish, spoon the zucchini noodles into serving dishes, top with steak, mushroom sauce & then parmesan shavings. 
Chefs Tips
To make the Zucchini noodles you will need a vegetable spiralizer, it is well worth investing in one. You can make noodles out of pretty much any vegetable, carrots, beetroot and sweet potatoes all make an awesome healthy alternative to conventional noodles.
