  • 2 cups Unsweetened shredded coconut
  • 3/4 cup Almond flour
  • 2 large Egg whites
  • 1/2 cup Erythritol or preferred keto sweetener
  • 1 teaspoon Vanilla extract
  • a pinch Salt

Method
 

  • In a mixing bowl, combine the shredded coconut and almond flour.
  • In a separate bowl, whisk the egg whites until they form stiff peaks. Gently fold in the erythritol, vanilla extract, and salt.
  • Gradually add the dry mixture to the wet mixture, folding gently until well combined.
  • Using a spoon or cookie scoop, shape the mixture into small balls or pyramids and place them on a parchment-lined plate.
  • Preheat your air fryer to 320°F (160°C). Once heated, place the macaroons in the basket in a single layer, ensuring they’re not touching. Cook for 12-15 minutes, or until golden brown.
  • Remove the macaroons from the air fryer and let them cool on a cooling rack.
