Bacon Wrapped Pork Fillet (Or Chicken) With Braised Red Cabbage

Pork fillet is a very underrated meat, I can count on one hand how many times I’ve had pork fillet at someone’s dinner party. I’m not sure why though, it is terrifically tender, incredibly easy to make, and it won’t break the bank!

If you are not a pork lover, you can substitute the pork fillet for chicken breasts. Wrapping the chicken (or pork) in bacon enhances the flavour and help keeps a lot of moisture.

Equipment

Ingredients
  

For The Marinated Pork/Chicken

  • 20 g Chopped garlic
  • 8 g Fresh thyme (chopped) 
  • 60 ml Olive oil
  • 40 g Whole grain mustard
  • 4 g Fine salt
  • 800 g  Pork fillet or chicken breasts
  • 200 g Streaky bacon

For The Mustard Sauce

  • 40 g White onion (finely chopped)
  • 8 g Chopped garlic
  • 40 g Dijon mustard
  • 80 ml White wine
  • 80 ml Cream
  • 4 g Fresh thyme

For The Braised Red Cabbage

  • 360 g Red cabbage (shredded)
  • 120 g Red onion (thinly sliced)
  • 20 g Brown sugar
  • 20 g Balsamic vinegar
  • 30 ml Red wine 
  • 30 g Butter
  • 2 g Cinnamon sticks
  • 2 g Star anise spice

For The Roasted Potato

  • 800 g Baby potato
  • 2 g Fine salt
  • 10 ml Olive oil
  • 5 g Fresh rosemary

For The Broccoli

  • 320 g Broccoli
  • 2 g Fine salt
  • 2 g Coarse pepper

Method
 

For The Marinade

  • Place garlic, herbs, olive oil, mustard & seasoning in a blender. Blitz until smooth. 
  • Place pork or chicken in a vacuum bag, add marinade & rub to coat the meat. Seal & marinade for 2-6 hours. 
  • After marinating, remove from the vac bag. Scrape off excess marinade. 
  • Wrap fillets in bacon strips, drizzle with oil.
  • Bake until the bacon is crispy and the pork/chicken is cooked through

For The Braised Red Cabbage

  • Place cabbage, onion, sugar, balsamic vinegar, red wine, butter & spices in a large pot. 
  • Bring the mixture to a simmer, cover with a lid, lower heat & cook for 1 1/2 hours, stirring often.
  • Remove the lid & continue cooking for 30 minutes until tender.

For The Roasted Potato

  • Place the baby potatoes in a baking tray. Drizzle olive oil, sprinkle with seasoning & rosemary. Toss to coat.
  • Roast at 180°C until golden & crisp.

For The Broccoli

  • Blanch the broccoli in salted boiling water until Al Dente!
  • Season.
