Biryani is one of my all-time favourite dishes, I’ve spent quite a bit of time in Cape Town in the Cape Malay community to learn about their unique flavours and spice combinations, biryani spice came to be one of my absolute favourites.

Equipment

Ingredients
 

For The Pork Fillet

  • 800 grams Pork fillet
  • 60 ml Olive oil
  • 2 grams Ground cardamom
  • 2 grams Whole coriander
  • 2 grams Chili flakes, (crushed)
  • 2 grams Cinnamon sticks
  • 2 grams Mustard seeds
  • 2 grams Garlic powder
  • 2 grams Mild curry spice
  • 2 grams Turmeric spice

For The Cheesy Bake

  • 240 grams Broccoli (florets)
  • 240 grams Cauliflower (florets)
  • 160 grams Leeks (sliced)
  • 240 grams Green beans (sliced)
  • 220 ml Sour cream
  • 220 ml Imitation creams
  • 160 grams Cheddar cheese, (grated)
  • 2 grams Chopped garlic
  • 2 grams Dried oregano
  • 2 grams Fresh rosemary (chopped)
  • 2 grams Turmeric
  • 2 grams Fine salt

Method
 

For The Pork Fillet

  • Combine all the spices & half of the oil together.  
  • Coat the pork with the oil & spice mixture and let marinade for at least 2 hours. 
  • Heat the remaining oil in a pan & fry on both sides until brown. Continue cooking in oven. (180°C) until cooked through.

For The Cheesy Veg Bake

  • Combine all vegetables in a baking tin.
  • Whisk together sour cream, cream, garlic, herbs & seasoning. Pour over veg and top with cheese.
  • Bake @ 180°C until veg is cooked with a slight crunch & cheese is melted & golden.
Chefs Tips
A cheesy vegetable bake is always a winner! Topping vegetables with some cheese is a great way of tricking the kids into finishing their greens. If you are making this meal for the kids, remove the chili from the spice mix and shred the pork and mix into the cheesy vegetables.
