This is my go-to meal for entertaining a group with a few kids. This recipe can be whipped up with minimal effort and shouldn’t take more than 10 minutes of your time. Add a few blanched peas to the yellow rice if you want to sneak in some greens for the little ones.

Equipment

Ingredients
 

For The Meatballs:

  • 80 ml olive oil
  • 1 gram ginger
  • 1 gram turmeric
  • 20 ml chutney
  • 20 ml apricot jam
  • 480 gram minced beef
  • 20 gram dried raisins
  • 2 eggs
  • 0.5 gram ground cardamom

For The Rice:

  • 160 gram rice
  • 160 ml chicken stock
  • 2 gram turmeric
  • 20 ml butter

Method
 

For The Meatballs:

  • Pre-heat oven to 180c
  • Divide into equal units and shape into balls
  • Place balls on an oven tray and bake for 10-15 minutes until cooked through

For The Basmati:

  • Cook as per package instruction, replace water with chicken stock
  • While rice is cooking, melt butter and mix in turmeric
  • As soon as rice is cooked gently pour turmeric butter over rice while gently mixing with a plastic/wooden spoon until all the rice turns yellow.
