Chicken Noodle Soup With Garlic Croutons

I am yet to meet a person who does not enjoy a delicious bowl of Chicken Noodle Soup! And contrary to popular belief, it is super easy to make, it just takes some time to prep all the ingredients as there are quite a few. One thing I’ve learnt throughout my cooking journey is, never compromise on lemon juice — if it is not freshly squeezed, it is NOT lemon juice.

Ingredients
  

For The Chicken Soup

  • 12 gram butter
  • 80 gram white onion, finely chopped
  • 80 gram carrots, diced
  • 40 gram celery, sliced
  • 8 gram garlic, chopped
  • 20 gram cake flour
  • 2 gram dried oregano
  • 2 gram coarse salt
  • 2 gram fresh thyme
  • 2 gram turmeric
  • 1 gram castor sugar
  • 1230 ml water
  • 200 gram potato, large
  • 600 gram chicken breasts, cubed
  • 80 ml milk
  • 80 ml cream
  • 320 gram egg noodles
  • 10 gram fresh parsley
  • 20 ml lemon juice, fresh

For The Garlic Croutons

  • 160 gram cocktail baguette
  • 20 ml olive oil
  • 8 gram garlic, chopped
  • 1 gram dried oregano

Method
 

For The Soup

  • Melt butter in a large pot over medium heat. Add onions, carrots, celery & garlic. Saute for 10 minutes until vegetables are soft.
  • Add flour, oregano, pepper, thyme & salt. Stir & cook for a few minutes then add chicken stock & potato.
  • Bring to a boil, without stirring, and leave to boil for about 3 minutes. Reduce heat to low & cover partially.
  • Simmer for 25 minutes until potatoes have softened.
  • Add shredded chicken, milk, cream & noodles. Continue cooking for 10 minutes until noodles are cooked and the soup has thickened.
  • Add parsley & lemon juice. Taste for seasoning, adjust if needed.

For The Garlic Croutons

  • Place bread cubes in a bowl, drizzle with oil, add garlic & herbs. Toss to coat.
  • Arrange on a baking tray & bake until crisp.
  • Serve separate.
