Chicken Stir Fry With Crunchy Vegetables & Egg Noodles

Who in their right minds do not love a good chicken stir fry with egg noodles? It is always easy to order in. It is usually not bad but almost always quite greasy leaving you stuffed and feeling quite queasy. CHICKEN STIR FRY WITH CRUNCHY VEGETABLES & EGG NOODLES

Ingredients
  

For The Sauce

  • 120 ml soya sauce
  • 20 ml oyster sauce
  • 40 ml mirin
  • 160 ml water
  • 20 gram fresh coriander, finely chopped
  • 20 gram garlic, chopped
  • 16 gram ginger, chopped

For The Crunchy Vegetables

  • 80 gram white onion, sliced
  • 160 gram red cabbage, shredded
  • 160 gram white cabbage, shredded
  • 160 gram carrots, julienned
  • 160 gram red pepper, julienned
  • 160 gram green pepper, julienned

For The Chicken

  • 2 gram turmeric spice
  • 2 gram fine salt
  • 600 gram chicken breasts, strips

Remaining

  • 20 gram bay leaf spice
  • 320 gram egg noodles, cooked, al dente
  • 60 ml olive oil

Method
 

For The Sauce

  • Fry coriander, ginger & garlic in olive oil over low heat for 3 minutes.
  • Add remaining sauce ingredients, bring to a boil & cook for 5 minutes

For The Crunchy Vegetables

  • Heat oil in a large frying pan. Fry all veg until cooked, with a crunch (al dente).
  • Remove from heat and place in a covered bowl to keep warm

For The Chicken

  • Add some more oil to the frying pan.
  • Add the chicken strips and fry until browned.
  • Season with salt & pepper.

To Finish

  • Heat oil in a wok/large frying pan.
  • Add meat & fry for 1 minute.
  • Add egg noodles & crunchy veg to the meat. Continue cooking for a few minutes.
  • Pour in sauce & continue cooking for 2 minutes while stirring to combine.
