Classic Rice Pudding Recipe

Rice pudding is a British dessert. It’s a classic, and we never get tired of it for all the right reasons. If you’ve loved it for a long time but never really made it with your hands, here’s an easy classic rice pudding recipe.

Equipment

  • One 1.6-litre ovenproof dish with a wide base

Ingredients
 

  • 25 grams Butter, or just enough to grease the oven dish
  • 75 grams Long grain white rice Jasmin or Basmati work well also
  • 900 ml Full-fat milk
  • 1 tablespoon of caster sugar
  • half a teaspoon Nutmeg, freshly grated, optional
  • 150 grams Pudding rice
  • Vanilla extract or one teaspoon of paste

Method
 

  • Step 1: Preheat the oven to 140 degrees C on Gas 1 or 3 or 160 degrees C on fan and grease the ovenproof dish well with butter.
  • Step 2: Place a saucepan on the stove and heat the milk. Add rice to the ovenproof dish along with the heated milk, sugar and vanilla. Stir them all till they mix well.
  • Step 3: Bake the mixture in the oven for roughly 30 minutes.
  • Step 4: Take it out and stir the mix gently. Add a little bit of nutmeg.
  • Step 5: Put it back in the oven and cook for about 1.5 hours until the top layer is golden in colour. At this point, the rice is tender and soft. Add some more butter if you like and leave it on the mid-shelf of the oven for a few minutes.
Chefs Tips
  • Use a quality rice cooker if you’re uncomfortable using a saucepan
  • You can use orange or lemon zest instead of vanilla.
  • Vegans can use coconut milk or vegan spread instead of dairy.
  • Use condensed milk if you want it to cook faster.
  • Serve it with jam, raisins or fruits.
  • You can use skimmed or semi-skimmed milk instead of full-fat milk but there will be a little change in the flavour for obvious reasons.
  • The best rice choice is medium to long-grain rice, like basmati
