Cottage Pie With Cauliflower Mash & Parmesan

I am a sucker for a good cottage pie. I would eat this every other day, however the potatoes made me put on quite a few pounds. That is, until I discovered a tasty, healthy alternative to traditional mashed potatoes. CAULIFLOWER MASH!

For The Mince

  • 60 ml olive oil
  • 640 gram minced beef
  • 80 gram white onion
  • 80 gram carrots
  • 80 gram plum tomatoes
  • 80 gram celery
  • 7 gram chopped garlic
  • 8 gram fresh rosemary
  • 8 gram fresh thyme
  • 0.5 gram brown sugar
  • 400 ml water for stock
  • 20 ml rice vinegar
  • 2 gram turmeric
  • 2 gram fine salt
  • 2 gram whole pepper
  • 2 gram garam masala spice
  • 2 gram whole cumin

For The Cauli Cheese Topping

  • 480 gram cauliflower
  • 30 gram butter
  • 4 egg yolks
  • 2 gram fine pepper
  • 2 gram dried oregano
  • 80 gram parmesan cheese
  • 2 gram parsley


For The Mince

  • Heat olive oil in a large pot. Add onions, carrots & celery. Sauté for 10 minutes until tender.
  • Add sugar & spices, keep stirring until fragrant.
  • Deglaze with the rice vinegar.
  • Add the mince and fry until brown.
  • Add garlic, herbs & tomato paste.
  • Continue cooking over medium heat until meat & veg is cooked. Season.

For The Cauli Cheese Topping

  • Roast cauliflower in the oven at 180°C until tender. Add into a mixing bowl and mash until smooth.
  • Add half the parmesan and the remaining ingredients, stir until well combined.
  • Set aside.

To Assemble Cottage Pie

  • Spoon the mince mix into serving containers, top with cauli mash & the remaining parmesan.
  • Bake for 10 – 15 min until golden brown.

This cottage pie freezes extremely well. At any given time, I have at least two of these cottage pies in my freezer. If you plan on making this recipe, double up on everything! Whenever you are too lazy to cook you can simply remove it from the freezer and pop it directly into a hot oven — and BOOM you’ve got a delicious meal without having to spend a fortune on takeaways!
