- 6 cups Broth, Chicken stock or chicken broth adds to the flavour of the stew. You can also choose to use beef broth.
- 1 large Carrot, peeled and cubed
- 4 Garlic cloves, finely chopped
- 1 medium Onion, finely chopped
- 1 pound Potato, cubed
- 2 tablespoons Olive oil, You can use any neutral oil. I prefer olive oil.
- 1 teaspoon Cumin
- 1 tablespoon Paprika
- 2 tablespoons Chilli powder
- 1/4 Cilantro, chopped

- Roast the Chillies: First, you will need to prepare your green chilli peppers. Wash them thoroughly and slice them lengthwise. Place them on a baking sheet and pop them into the oven for 20 minutes at 200°C.
- Alternatively, you can roast the peppers in a pan on the stove. The peppers are ready once their skin blisters.
- Cool and Chop: Allow the green chillies to cool. Peel their skins and chop them up. Keep aside.
- Prepare the Pork: While your peppers are in the oven or on the stove, chop the pork meat into small cubes and season them. Toss the cubes into a bowl with the chilli powder, cumin, paprika, salt and pepper and olive oil.
