This delightfully fresh sauce mixed with couscous makes the best base for a salad and can be adapted to your liking.

Grilled Halloumi & Couscous Salad With Salsa Verde
Equipment
- Bowl
Ingredients
For The Salad Base
- 120 g Cucumber (sliced)
- 120 g Cherry tomato (halved)
- 60 g Red onion (thinly sliced)
- 40 g Leafy lettuce (washed)
- 40 g Rocket (washed)
- 80 g Kalamata olives
- 80 g Couscous (cooked & cooled)
- 60 g Carrots (julienne)
For The Halloumi
- 600 g Halloumi cheese (1cm slabs)
- 60 ml Olive oil
For The Salsa Verde Dressing
- 12 g Chopped garlic
- 28 g Fresh parsley (chopped)
- 12 g Fresh mint (chopped)
- 8 g Fresh chives (chopped)
- 8 g Fresh coriander (chopped)
- 16 g Capers (chopped)
- 16 g Whole grain mustard
- 20 g Red wine vinegar
- 60 ml Olive oil
- 2 ml Coarse pepper
- 1 g Birds eye chili, at least 1 whole chili
Method
For The Salad Base
- Place all the ingredients in a bowl & toss to combine. Arrange in a serving dish.
For The Halloumi
- Heat olive oil in a pan, add slabs of halloumi & grill until golden & crispy on the edges.
- Place on top of the salad base.
For The Salsa Verde Dressing
- Place all the ingredients in a blender & blitz until somewhat smooth.
- Drizzle over salad.
