This delightfully fresh sauce mixed with couscous makes the best base for a salad and can be adapted to your liking.

Grilled Halloumi & Couscous Salad With Salsa Verde
Equipment
Ingredients
For The Salad Base
- 120 g Cucumber, sliced
- 120 g Cherry tomato, halved
- 60 g Red onion, thinly sliced
- 40 g Leafy lettuce, washed
- 40 g Rocket, washed
- 80 g Kalamata olives
- 80 g Couscous, cooked & cooled
- 60 g Carrots, julienne
For The Halloumi
- 600 g Halloumi cheese, 1cm slabs
- 60 ml Olive oil
For The Salsa Verde Dressing
- 12 g Chopped garlic
- 28 g Fresh parsley, chopped
- 12 g Fresh mint, chopped
- 8 g Fresh chives, chopped
- 8 g Fresh coriander, chopped
- 16 g Capers, chopped
- 16 g Whole grain mustard
- 20 g Red wine vinegar
- 60 ml Olive oil
- 2 ml Coarse pepper
- 1 g Birds eye chili, at least 1 whole chili
Method
For The Salad Base
- Place all the ingredients in a bowl & toss to combine. Arrange in a serving dish.
For The Halloumi
- Heat olive oil in a pan, add slabs of halloumi & grill until golden & crispy on the edges.
- Place on top of the salad base.
For The Salsa Verde Dressing
- Place all the ingredients in a blender & blitz until somewhat smooth.
- Drizzle over salad.
