The fresh taste of the native Brazilian passionfruit is simply magical in comfort foods like puddings. The self-saucing recipe is not as complicated as you may think and only requires 15 minutes of prep time and an hour of cook time before you have a scrumptious pudding ready.

This decadent recipe will impress your guests so much that they will not be able to resist asking for seconds. It works as a wonderful dessert after a heavy Sunday lunch. The self-saucing sponge with a surprising custardy curd is truly a delight to your sweet tooth.

For the Pudding

  • 225 grams Self-raising flour
  • 125 grams Unsalted butter + additional to grease
  • 75 grams Caster sugar
  • 75 ml Whole milk
  • 1/4 teaspoon Salt
  • 4 Passion fruits, ripe
  • 2 medium Eggs
  • Zest of one orange, finely grated
  • Icing sugar

For the Sauce

  • 1 tablespoon Cornflour
  • 75 grams Caster sugar
  • 75 ml Orange juice
  • 150 ml Milk

To Serve

  • Cream, custard or ice cream
  • Passionfruit

Method
 

  • Crank up the oven to 160°C and allow it to preheat. Take a baking tray and grease it with the additional butter. Layer the tray with the pulp of the passion fruits.
  • Combine the melted butter, eggs and milk in a bowl. In another bowl, sift the flour and mix with the orange zest and sugar. Stir the wet mixture into the dry mixture until combined.
  • Drop this mixture over the passion fruit pulp in the tray and smoothen it out. Try to ensure the passionfruit remains below.
  • Next, prepare the sauce. Combine the cornflour and sugar in a bowl. Combine the orange juice and milk. Sprinkle the dry mixture over the pudding batter and follow with the wet mixture.
  • Place the tray into the preheated oven and allow the batter to bake for 45 minutes. You will get a lightly browned top. Insert a skewer and check if it comes out clean.
  • Sprinkle some icing sugar on top and serve hot. You can choose to serve it with ice cream or cream.
Chefs Tips
Choose to use freshly squeezed orange juice over store-bought juice. Not only is fresh juice healthy than boxed juice, but it will also lend a more delightful flavour to your pudding.
