Roasted Cauliflower Soup Recipe

  • 600 g Cauliflower
  • 400 g White onion
  • 4 g Smoked paprika
  • 4 g Ginger spice
  • 60 ml Olive oil
  • 8 g Chopped garlic
  • 8 g Castor sugar
  • 200 ml Cream


  • Place cauliflower & onions on a baking tray, drizzle with olive oil. Roast until cooked and slightly charred.
  • Heat olive oil in a large pot then add garlic & spices. Add cauliflower & stir to coat in spices.
  • Deglaze with stock then add cream & leave to simmer for 30 min.
  • Season with salt & pepper. 
  • Puree until smooth.
Chefs Tips
This soup is best served within a day of making it. If you plan on freezing it, do not add the cream before freezing. Add the cream once you have defrosted and re-heated it. And as with any soup, a good bread will always be a great accompaniment.
