For The Chicken

  • 800 grams chicken breast or thigh depending on your preference
  • 60 ml olive oil
  • 8 grams chopped garlic
  • 60 ml lemon juice
  • 2 grams turmeric spice
  • 2 grams fine salt
  • 480 grams lemon, slices

For The Dill Sauce

  • 240 ml sour cream
  • 20 ml whole grain mustard sauce
  • 4 grams lime leaf spice
  • 1 grams ground coriander
  • 10 grams fresh dill, chopped
  • 2 grams turmeric
  • 2 grams fine salt

For The Broccoli-Leek Rice

  • 280 grams wild rice, cooked
  • 400 grams broccoli, florets
  • 200 grams leeks, finely chopped
  • 100 grams white onion, finely chopped
  • 60 grams butter
  • 8 grams garlic, chopped
  • 2 grams coarse pepper
  • 2 grams turmeric
  • 2 grams fine salt

Method
 

For The Chicken

  • Heat olive oil in a pan. When hot, add chicken breast fry until golden brown. Flip & continue cooking.
  • While cooking, add garlic, lemon juice, salt & pepper.
  • Transfer to a baking tray, top with lemon slices & continue cooking in oven.

For The Dill Cream Sauce

  • Combine all the ingredients together, whisk until well combined & serve with chicken.

For The Broccoli Rice

  • Heat butter in a pan. Add leeks, onion & garlic. Fry for a few minutes then add broccoli & seasoning.
  • Continue cooking until slightly toasted then mix into cooked rice.
Chefs Tips
This is quite a forgiving recipe as people tend to overcook chicken breasts (please try not to), however the creamy dill sauce is so decadent and rich it can mask almost any (slightly) overcooked chicken breast. Word to the wise — brine your chicken breast for at least 30 minutes before starting this recipe. If you want to learn more about brining we write an easy to read guide.
