Combine all the spices & half of the oil together.
Coat the pork with the oil & spice mixture and let marinade for at least 2 hours.
Heat the remaining oil in a pan & fry on both sides until brown. Continue cooking in oven. (180°C) until cooked through.
For The Cheesy Veg Bake
Combine all vegetables in a baking tin.
Whisk together sour cream, cream, garlic, herbs & seasoning. Pour over veg and top with cheese.
Bake @ 180°C until veg is cooked with a slight crunch & cheese is melted & golden.
A cheesy vegetable bake is always a winner! Topping vegetables with some cheese is a great way of tricking the kids into finishing their greens. If you are making this meal for the kids, remove the chili from the spice mix and shred the pork and mix into the cheesy vegetables.
