Cheesy Chicken Roll-Ups With Broccoli Mashed Potato

For The Roll Ups

  • 40 g Streaky bacon (baked until crisp)
  • 320 g Chicken breasts (butterflied)
  • 80 g  Mozzarella cheese (grated)
  • Bacon bits (optional)

To Crumb

  • 48 g Cake flour
  • 2 Eggs
  • 60 g Breadcrumbs
  • 60 ml Olive oil

For The Broccoli Mash

  • 200 g Large potato (peeled & cubed)
  • 200 g Broccoli (florets)
  • 10 g Butter
  • 2 g Turmeric


For The Roll Up

  • Flatten the butterflied chicken breasts with a mallet or rolling pin.
  • Place chicken breast on a sheet of plastic wrap. Place 1 strip of bacon on the chicken & top with cheese.
  • Roll into a roulade & knot the ends of the plastic wrap.
  • Poach in boiling water until cooked. Remove & leave to cool in ice water.
  • Remove the plastic then crumb by gouging in flour, then dipping it in the beaten eggs then covering with breadcrumbs.
  • Brush with olive oil and bake @ 200C until golden. Slice into rounds.

For The Broccoli Mash

  • Cook potatoes in a large pot. Add broccoli florets during the last 10 minutes of cooking time.
  • When cooked through, drain & leave to steam dry.
  • Return the broccoli & potatoes to the pot, mash with butter & seasoning.
Chefs Tips
