Chicken & Broccoli Soup With Freshly Baked Baguette

For The Soup

  • 20 ml Olive oil
  • 10 gram Butter
  • 8 gram Chopped garlic
  • 200 gram White onion, sliced
  • 80 gram Celery, sliced
  • 400 gram Broccoli, florets
  • 400 gram Chicken breasts
  • 1 gram Castor sugar
  • 1 liter Water
  • 4 gram Dried oregano
  • 120 ml Cream cheese
  • 160 ml Cream
  • 80 ml Milk
  • 2 gram Turmeric
  • 2 gram Coarse salt


For The Soup

  • Heat olive oil & butter in a large pot. Fry garlic, onion & celery until soft.
  • Add chicken, broccoli, stock & oregano. Bring to a boil, reduce heat & simmer with a lid for 20 minutes.
  • Remove the chicken from the liquid & shred with a fork. Set aside.
  • Use a hand blender to blend soup. Return chicken to the pot, add cream cheese, cream, salt & pepper.
  • Simmer for a few minutes.
Chefs Tips
Serve this with a freshly baked baguette and some good, salted butter and you are in for a treat! I like to make a large pot and keep some of this soup in my freezer for those unexpected cold & lazy days. If you plan on freezing, only add the cream after thawing and heating again.
