For The Creamy Gem Squash

  • 600 gram Cream style corn
  • 40 ml Olive oil
  • 100 gram Frozen corn
  • 100 gram White onion, finely chopped
  • 1 gram Red chili, chopped
  • 2 gram Ground cumin
  • 2 gram Ground coriander
  • 4 gram Fresh chives, chopped
  • 4 each Gem squash, halved & cooked
  • 200 gram Bacon bits, fried until crisp
  • 120 gram Cheddar cheese, grated

For The Green Beans

  • 360 gram Green beans, top & tail
  • 20 ml Olive oil
  • 2 gram Fine salt
  • 2 gram Fine pepper


For The Creamy Corn Gem Squash

  • Heat olive oil in a pan & fry onions until translucent.
  • Add chili and spices to the onions. Cook for a few minutes until fragrant.
  • Add cream style corn & chives to the pan & stir through. Season with salt & pepper. Set aside.
  • Place gem squash in pot of boiling water & steam until cooked. When cooked, remove from the pot & use a spoon to scoop out the seeds. Discard seeds.
  • Spoon the creamed corn mixture into the cooked gem squash halves, top with bacon & grated cheddar.
  • Place under the grill & let cheese melt until golden & bubbly.

For The Green Beans

  • Heat a frying pan and add the green beans with a splash of water cook until water has evaporated.
  • Add some oil and fry for a few minutes then add garlic and cook till fragrant.
  • Add lemon juice & seasoning. Cook until lemon juice has evaporated.
Chefs Tips
Next time you see a bad of gem squashes at the grocery store, grab them and try this recipe. It is so much better than those bland recipes where they are only boiled and if you are lucky your granny added some cinnamon sugar. — Which, by the way, is also very nice if you make it with cinnamon and treacle sugar!
