Equipment

  • Muffin tin or silicone muffin cups suitable for an air fryer
  • Whisk
  • Spatula

Ingredients
 

  • 1 1/2 cups All-purpose flour
  • 2 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1/2 cup Granulated sugar
  • 1/4 cup Unsalted butter melted
  • 1 large Egg
  • 3/4 cup Milk
  • 1 teaspoon Vanilla extract
  • 1 cup Fresh blueberries

Method
 

  • In a mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In another bowl, combine the sugar, melted butter, egg, milk, and vanilla extract. Mix until smooth.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Gently fold in the blueberries.
  • Preheat the air fryer to 350°F (175°C).
  • Fill each muffin tin or silicone cup about 2/3 full with the batter.
  • Place the filled muffin tins or cups in the air fryer basket, ensuring they don’t touch.
  • Cook for 12-15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Once done, remove the muffins from the air fryer and let them cool on a wire rack.

  1. Do not overmix the batter; this can result in dense muffins.
  2. Fresh blueberries work best, but if using frozen, do not thaw them. Add them directly to the batter.
