Equipment

Ingredients
 

  • 2 cups Almond flour
  • 1/2 cup Granulated sugar or sweetener of choice
  • 2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 2 Lemons, zest and juice
  • 2 large Eggs
  • 1/4 cup Almond milk, unsweetened
  • 1/4 cup Butter or melted coconut oil
  • 2 tablespoon Poppy seeds

Method
 

  • In a large mixing bowl, whisk together the almond flour, sugar, baking powder, and salt.
  • Add the lemon zest and juice to the mixture.
  • In a separate bowl, beat the eggs and then add the almond milk and melted coconut oil. Mix well.
  • Gradually combine the wet ingredients with the dry ingredients, stirring until just combined.
  • Fold in the poppy seeds.
  • Line the air fryer basket with muffin liners or use silicone muffin cups. Fill each cup about 2/3 full with the batter.
  • Set the air fryer to 320°F (160°C) and bake for 12-15 minutes or until a toothpick inserted into the centre of a muffin comes out clean.
  • Allow the muffins to cool for a few minutes before serving.
